Nut Cake with Brittany

Sissy asked me to contribute and.. look who's here! After chatting and snagging a few recipes from her Celtic Cookbook, I decided to try out the Nut Cake. Now, for this recipe you're going to need a bunt, or tube as it's sometimes called, pan. My mother's bunt pan kind of burned the bottom (Now the top of my cake since you have to flip bunt cakes) of my cake but it's really not that bad. Alright, I'll stop yapping and get to the good stuff!

Nut Cake
Associated Holidays: Name days/Birthdays, Samhain, Mabon, Esbat Dinners, Weddings
As most nuts are fertility charms, this makes an excellent wedding cake.
Ingredients:
1 cup soft butter
1 3/4 cups sugar
1 teaspoon vanilla extract
3 whole eggs plus 1 egg yolk
3 cups sifted flour
2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup milk
1 cup finely chopped nuts

Cream butter; gradually add sugar. Beat until light and fluffy. Add vanilla. Add eggs and yolk, one at a time, beating thoroughly after each addition. Add sifted dry ingredients alternately with milk, beating until smooth. Fold in nuts. Pour into greased 9 inch tube pan, liked on bottom with waxed paper. Bake in 375 degree oven for 1 hour or until done. Cool in pan for 10 minutes. Remove to rack.

I really did have so much fun with this recipe. For the nuts, I used walnuts but I'm sure any nut you prefer would work. The batter was absolutely delicious, I highly recommend licking the spatula when you're done with it!


And this is what my cake looked like right before I took it out of the oven. It looked like a crater, but it looked awesome!


And that's my smiling face, right there. Taking my baby out of the oven. Oh, should I mention this is the first time I've ever baked something from scratch by myself? Yeah, pretty damn cool. -- Taking my baby out of the oven. Goodness, don't let me have children.

And there's the finished product, folks! Like I mentioned before, it's dark because the pan is a little bit of a bitch. But otherwise, it was freakin' delicious. Very light and fluffy and moist! Vanilla-y and nutty, with a plain glaze of powdered sugar and water poured on top of it. But, there you have it! Thanks for reading and blessed be!
