Rainbow Swirl Cake!


So, technically this isn't a recipe from Shan's Celtic cookbook but, it was super fun! I just got a white cake mix from the grocery store and divided the batter into 7 bowls. 6 of those bowls of batter were dyed different colors using food coloring and the last one was left alone.

Colors:

Red
Orange
Yellow

Green
Blue
Purple


I used two 9inch circle pans for this one. One pan had the red, orange, yellow, and half of the batter from the bowl I just left alone. The other had the green, blue, purple, and other half of the batter from the bowl I left alone. Once I had all the batter poured in, I gently took a spatula and swirled the colors around just enough so they wouldn't mix.

This is what they looked like out of the oven!


So after they cooled (I allowed them to sit for 10 minutes before removing from the pan) I started stacking. I placed the darker cake on my cake tray and left the lighter one on the cooling rack. After they were completely cooled, I iced the bottom and then placed the top on and iced it. This is how it turned out.



I know, pretty sloppy. Give me a break! I'm by no means a cake artist :P. So after icing I did the thing any normal human being would do. I cut it, duh.



Then I ate my piece. It was freakin' good. Yay happiness!
