What You'll Need:
- A plastic container big enough to fit your turkey breast(s)
- Vegetable Oil
- Red Wine Vinegar or Lemon Juice (I used red wine vinegar because I used all the lemon juice a few weeks back to lighten my hair :P)
- Garlic Powder
- Ground Black Pepper
- Basil
- Rosemary
For the mashed potatoes:
- 4 russet potatoes
- 1/2 teaspoon of salt
- 2 tablespoons of warm butter
- 1/2 cup of warm milk (or cream, or half and half)
- Ground black pepper
- Garlic powder
The Turkey:
Okay, lets begin with the turkey breasts. First and foremost you need to defrost and thaw out the turkey. You could do this by leaving it in your sink the night before or using a microwave. If you use a microwave, be careful to make sure you just thaw it out, not cook it.
After they're thawed, place the turkey breasts in the container and rub the rosemary and basil onto the turkey directly. I didn't use measurements, I played it by eye.
Next, pour vegetable oil over the turkey breasts until they're just covered. Now, if you're a measurement person, you're going to want to kill me. For this marinade I really just added in as much of each ingredient that I wanted. So, add the garlic powder, red wine vinegar, and a dash of black pepper into the vegetable oil. Once everything's in there get in there with your hands and turn your turkey breasts over and over until the mixture is thoroughly... well, mixed.
Put a cover on the container and leave in the fridge for up to a day. Really you can let it marinade for however long you want. I only marinaded mine for 4 1/2 hours and it turned out awesome.
After the marinading process is over, turn the oven on to broil (mine only has a Hi or Lo setting so I put it on high. If you can set degrees, set it for 375) and line the bottom of whatever pan you're using with aluminum foil and place the turkey on top of it. Once it's on the pan, take a little bit of the marinade and slather it on top of the turkey, for good measure.
Once the oven is ready, place another sheet of aluminum foil over your turkey breasts and let it cook for about 20 - 25 minutes. While the turkey is in the oven, go fire up your grill and get the heat goin'. Why? Because after this turkey is done broiling, you're going to put it on the grill. 5 minutes on each side should do it! And now you have a delicious, juicy turkey breast.
The Potatoes:
Now for the simpler part of the meal! The potatoes!
Wash, peel, and cut the potatoes into approximately 2" cubes. Don't make the cubes too small, it'll fuck shit up. I don't remember how but, trust me.
Place your potatoes in a pan and fill it with water, just enough to cover the potatoes, and add the salt. Like this:
Yeah, now that you have your potatoes in your sexy little pan, set the heat to high and wait for it to boil. Once the water is boiling, turn the heat down to medium-heat and cover the pan. Let the potatoes simmer for about 15 - 20 minutes. To decide how long to let it simmer, poke a fork into a potato. If it stabs the poor thing easily then, your potatoes are done.
Once your potatoes are done simmering, dump them into a strainer and shake to get the water away from your potatoes.Water is now your enemy.
Place the potatoes in a serving bowl or back into the pan you used to cook them and mash them up. You can use a number of things but I personally used a potato masher and a hand egg beater. Beat in milk and butter, make sure they're warm! That's the key to dreamy potatoes. Cold shit will make your potatoes icky.
Add the pepper and garlic powder if desired. I personally added quite a bit of pepper and just a dash or two of the garlic powder. They came out fantastic!
You don't have to but, I picked up some turkey gravy packets and prepared those. This is my finished product!
